How to prepare the soft strawberry and chocolate tart

  • First, prepare the filling: in a bowl, place the ricotta, sugar, and Nutella. Stir with a spoon.

  • Add the chocolate chips, stir with the spoon, and set aside for a moment.

  • For the cake: in a bowl, place the eggs and sugar. Mix with the electric mixer until the mixture is fluffy and frothy.

  • Add the oil and milk. Mix with the electric mixer.

  • Add the flour, baking powder, and cocoa. Mix well, being careful not to create lumps.

  • Add the chocolate shavings or chips and stir with a spoon.

  • Pour the obtained mixture into a greased and floured 11-inch smart tart mold. Bake in a preheated static oven at 355°F for about 25 minutes. Make sure to check the baking time according to your oven.

  • Whip the cream until stiff peaks form, add the cocoa powder, and continue mixing until the cocoa is perfectly incorporated. Set aside for a moment.

  • Take the ricotta and Nutella mixture and add the chopped strawberries. Stir with the spoon.

  • Remove the cake from the oven and let it cool. In the cavity created by the smart mold, place the ricotta, Nutella, and strawberry mixture. Level it.

  • Insert the cream with cocoa into a piping bag with a star tip and decorate the surface of the cake.

  • Store in the refrigerator until ready to serve.

Storage

The soft strawberry and chocolate tart can be stored in the refrigerator for 2-3 days in an airtight container. It is not advisable to freeze the entire tart due to the whipped cream and ricotta, which may change their texture once thawed. However, it is possible to freeze just the cake base, well wrapped in plastic wrap, for about 1 month. In this case, the filling should be prepared and added after thawing.

Ricotta can be substituted with mascarpone or cream cheese for a richer consistency.
