Steps for Preparing Mushroom Steak
Prepare the meat, debone it, pound it with a meat tenderizer, without overdoing it to avoid breaking it. If it is thick enough, there’s no need to use protection, otherwise work using a sheet of parchment paper.
In the chopper prepare the breading, with breadcrumbs, garlic, parsley, and a little chili pepper. Finely chop and sprinkle the meat with the breading, set aside.
In a pan, put one or two tablespoons of extra virgin olive oil, add minced garlic and chopped chili pepper, then add the mushrooms and salt, let them brown, then deglaze with white wine, and let cook for a few minutes with the lid on. At the end of cooking, add chopped parsley.
Set aside the mushrooms. In the pan, add a little more oil, and let the steaks brown on both sides. Salt and add the mushrooms, let cook for a couple of minutes with the lid on, then we will be ready to enjoy our pork steak with cardoncelli mushrooms. It’s important not to overcook the meat to avoid making it tough.
Alternatively, you can use pork collar or chicken breast which are even more tender.
