- 2 medium-sized calamari
- 1.5 oz of breadcrumbs
- 1.1 oz of grated Parmesan cheese
- 1 glass of white wine
- 1 sprig of parsley
- to taste of salt

One of my shortcomings is not wanting to clean fish, so I get help from the fishmonger 😀
After cleaning the calamari, finely chop the tentacles.
In a bowl, pour the breadcrumbs, tentacles, add the Parmesan cheese, and parsley.
Season with white pepper, garlic powder, and salt.
Mix with a fork and then fill the calamari.
Close the calamari with toothpicks.
In a pan, pour some extra virgin olive oil, place the stuffed calamari, and sauté for a few minutes on both sides.
Season the calamari with a little salt.
Pour in the glass of white wine and a bit of parsley, cook on low heat for about 15 minutes until the sauce reduces but does not completely evaporate.
