Today I am sharing a recipe that is very dear to me, sweet and savory crepes.
The crepe is a soft waffle that allows us to create many recipes. I usually prepare it to fill with cold cuts, cheese, Nutella, cream, and jam.
They are so easy to prepare that they can even be made for breakfast while waiting for a nice coffee; in this case, we fill them with sweet creams, jams, or honey. The versatility of these crepes allows us to always have them ready if prepared in advance and use them for any meal of the day, for example, for a light dinner filled with any type of vegetable.
To achieve a smooth batter without lumps and with excellent cooking, we must be attentive to the cooking and have just a little patience.
You will decide the crispness of the crepe based on your tastes; I believe that if it is undercooked, it is too soft on the palate, so I cook it a few minutes longer.

Ingredients for Sweet and Savory Crepes
- 3 eggs
- 9.17 oz all-purpose flour
- 2.11 cups milk
- butter (For cooking)

- 1 Crepe Pan
- 1 Spatula
- 1 Bowl
- 1 Whisk
Steps for Sweet and Savory Crepes
Take a bowl, crack the eggs taking care not to let any shell fragments fall.
After adding all the eggs, add the milk.
Take a whisk and mix for a few minutes. Add the flour with a sieve and continue working all the ingredients until you obtain a smooth and lump-free mixture.
Cover the bowl with a cloth and let the mixture rest in the fridge for half an hour.
Take the bowl from the fridge and mix the batter with a wooden spoon.
Lightly heat the pan with a bit of butter.
Pour a ladleful of crepe batter into the center of the pan and rotate the pan to distribute the batter evenly in a thin layer.
Cook the crepe over low heat for 2 minutes until the batter is cooked.
Use a spatula to flip the crepe without breaking it. Cook the other side for another 2 minutes until fully cooked.
Transfer the crepes to a serving plate and continue for the entire batter.
Ready to be served as you prefer!
You can keep the crepes in the fridge for two days.
