Stuffed mussels in the air fryer are great served as an appetizer, just like the fried mussels in the air fryer. I love cooking fish and shellfish in the air fryer, like air-fried calamari, shrimp, and cuttlefish. You can choose your favorite stuffing for making stuffed mussels; I use well-seasoned breadcrumbs and filtered mussel water, while other times, especially if I buy frozen half-shell mussels, I add some tomato sauce to the breadcrumbs. This recipe is from my book Air Fryer by Gribaudo, and for me, who has been using the air fryer since 2018, it was very rewarding to create a book.

Shopping List
- 24 mussels (large)
- 5 tablespoons breadcrumbs
- 1 clove garlic
- 2 sprigs parsley
- 3 pinches oregano
- 1 tablespoon extra virgin olive oil
- salt (optional)
- 2 pinches pepper
- 1/4 cup water (from mussels or tomato sauce)
What You Need to Make Air-Fried Stuffed Mussels
- 1 Air fryer
- 1 Bowl
- 1 Strainer fine mesh
- 1 Baking tray optional
Procedure
Spread the cleaned mussels in a pan with a lid, turn on the heat, and let them open; it will take a couple of minutes. Remove the mussels from the pan, discard the empty half shell, and then filter their broth. Set aside.
In the bowl, distribute the breadcrumbs and season them with chopped garlic and parsley, oregano, and pepper. Mix well, then add the mussel broth and oil. Mix again well and evaluate whether to add salt.
Take the mussels and stuff them with the breadcrumbs, pressing it slightly onto the meat but not overdoing the quantity. Arrange the mussels in the air fryer basket, with the stuffing facing up and avoiding overlapping them; alternatively, you can place them in a baking tray that fits the basket.
Set the air fryer to 392°F and air-fry the stuffed mussels for 7 minutes. Serve the mussels hot, arranging them on a serving platter.
Rosella’s Tips
For an extra touch of flavor, you can enrich the breadcrumbs with pecorino cheese. I recommend consuming them immediately; they’re also good warm, but reheating would spoil them. If your air fryer has a small basket, cook the mussels in 2 batches.
