Steps
First, preheat the oven to 356°F on the conventional (static) setting.
Take all the ingredients out of the fridge, starting with the puff pastry, which you should unroll gently.
Place your cupcake molds on the puff pastry, leaving about 1 3/16 in between the base of each.
Using a pair of scissors, cut the puff pastry together with the underlying parchment paper.
Transfer the puff pastry squares into each mold.
Press them to adhere all around by slightly folding the edges outward.
Prepare the filling: beat the eggs with parsley, garlic, salt, pepper, Parmesan, milk and any desired spices.
Add the flour and make the mixture smooth and homogeneous.
Transfer all the molds to a large shallow baking tray.
Pour about 1 tablespoon of the egg mixture into each cupcake mold.
Add the shredded provola,
the ham and the diced zucchini.
Pour more of the egg mixture up to about 1/2 in from the rim,
and bake in a preheated oven at 356°F for 15 minutes.
Wait 5 minutes before unmolding and our quick savory cupcakes are ready.
If you have leftover mixture and have run out of pastry, you can fill cream puff or cupcake liners and bake those as well.
