Chocolate Pudding with Multicooker

Chocolate pudding with multicooker cooked in a water bath in the multifunction pot, like the creme caramel with instant pot. Yes, because regardless of brand or model, as explained in the instant pot guide, we are always talking about a programmable and multifunctional pot. There are many desserts that can be cooked in instant pots, from custard to apple cake, in this case, we will cook the pudding in a water bath using the electric pressure cooker function. I used a rectangular mold because my recipe is inspired by the Piedmontese bonet, based on what you have, you can use any mold that fits comfortably in the instant pot. This is my favorite chocolate pudding because crushed amaretti are added to the mixture, but if you have your own favorite chocolate pudding recipe, you can use it freely. For example, you can make this Nesquik pudding to make kids happy.

Ingredients to make the pudding with the multicooker

  • 3/4 cup fresh liquid cream
  • 3/4 cup whole milk
  • 2 eggs
  • 1/4 cup powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 2.5 oz amaretti (dry – plus some amaretti for garnish)
  • 1 tbsp amaretto (liqueur)
  • olive oil (to brush the mold)

What you need to make the pudding in the pressure cooker

  • 1 multicooker
  • 1 Mold in steel or aluminum 7×4 inches
  • 1 Dessert cooling rack low steel

Procedure

  • Put the amaretti in a bag and crush them with a rolling pin. In a bowl, crack the eggs and add the powdered sugar and sifted cocoa, mix very well, and pour the cream, milk, and liqueur in a thin stream. Finally, add the crushed cookies and mix again. Let the mixture rest for 10 minutes and then mix again. This way the cookies absorb the liquid and do not separate during cooking.

  • Brush the mold with oil and pour the pudding mixture, making sure to mix it well again before pouring it into the mold.  Place the low rack in the multicooker and pour in 5 cups of water. Lay the mold on the rack and close the pot with the pressure lid.

  • Program the pot with the steam function or the low pressure function and start the cooking for 20 minutes. At the end of cooking, let the pot depressurize naturally* and only then remove the lid.  Let the chocolate pudding come to room temperature and then put it in the refrigerator to cool for about 4 hours. Unmold onto a plate, garnish with amaretti, and serve.

Tips from the pan to the jar

With this procedure, you can make other pudding variations. If you prefer, you can omit the liqueur and replace the amaretti with plain cookies. 

This is a good solution to use up leftover cookie crumbs.
