  • 2/3 cup breadcrumbs
  • 2 eggs
  • 1 clove garlic
  • Half lemon (zest)
  • 1 tbsp parsley
  • 0.53 oz hazelnuts
  • 1 tsp salt
  • to taste pepper
  • 2 tsp extra virgin olive oil

Steps Required to Prepare the Cutlets

  • Clean the pleurotus mushrooms by removing part of the stem and any cultivation residues, wash them quickly without leaving them in water, dry them, and prepare the mixture to add to the breadcrumbs. In the chopper, put the garlic and parsley, salt and pepper, hazelnuts, and the zest of half a lemon, all with part of the breadcrumbs. Chop for a few seconds and add the rest of the breadcrumbs, mix, and in the meantime in a deep dish, beat the eggs with a fork.

  • Start coating the pleurotus mushrooms in the eggs and then immediately in the seasoned and flavored breadcrumbs with parsley and lemon.

  • Place the pleurotus mushroom cutlets on the baking sheet with parchment paper, drizzle with a bit of olive oil, and cook in the microwave in crispy mode at maximum power for 18 minutes. Alternatively, you can bake the pleurotus cutlets in the oven at 350°F for 30 minutes.
