The cookie biscuits with chocolate chips, also known as chocolate chip cookies, are of American origin and famous all over the world ..

They are not at all difficult to make, so much so that the dough can also be made by hand, and unlike those on the market where in a package you can find only 6, at home we can bake them in large quantities.
Then the recipe I have the pleasure of sharing with you is from pastry chef Maurizio Santin, so you can be sure .. it is difficult to go wrong .. so much so that my kids, when they were at home, would ask me to make “the good ones you make”

The fundamental ingredients are butter, eggs, sugar, and weak flour .. in addition to the inevitable chocolate chips.

Over the years I’ve learned to use slightly salted butter (so I don’t use the amount provided in the recipe) and to make them a little crunchier I add a small part of semolina to the dough. In short, I’ve personalized them a bit, but I guarantee they are really delicious and addictive! As for the size ..everyone chooses how they want them .. larger (like the American ones) or smaller.

Ingredients

Cookie Biscuits … the good ones

  • 2 1/2 cups all-purpose flour
  • 1/2 cup semolina
  • 7 oz salted butter (softened)
  • 3/4 cup sugar
  • 7 oz chocolate chips
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 egg yolk
  • 1 egg
  • vanilla
  • 1 pinch salt (do not use if using slightly salted butter)

Preparation of Cookie Biscuits … the good ones

Sift the flour and semolina first and mix them together with the vanilla.

  • – In a large bowl, work the butter with the sugar and the salt (only if using regular butter) with a fork, until smooth.

  • – Then add the yolk, the whole egg, and mix with the fork

  • – Add the flours, baking powder, and baking soda to the mixture (sifting directly into the bowl) and finally add the chocolate chips.

  • – Knead briefly in the bowl and then compact the dough on the work surface. Form 3 logs.

  • – Wrap the shortcrust pastry logs in foil and refrigerate for at least an hour or more if necessary. After the time has passed, take out one log at a time and cut the cookies about 1/2 inch thick.

  • – Place the slices on a baking sheet lined with parchment paper or a mat and bake in a preheated oven at 355°F (static) for 12/15′ until colored or 340°F if fan-assisted

Notes and Tips:

-Semolina is my variant; I find it makes the cookies crunchier, but if you don’t like it, use 370 g of flour.

 -They keep for days in a tin box.

 -They can be a nice Christmas gift if packaged in transparent bags with a nice red ribbon.
