When the craving for ice cream calls, there’s nothing better than making it fresh, at the moment, in just over half an hour it will be ready to enjoy thanks to the new Medion ice cream maker, perfect ice cream in about 40-60 minutes depending on the quantity we prepare. I started with this ice cream to try out the machine, I had some coconut milk at home and thought, yes, a nice coconut ice cream will be perfect with this August heat. The result was truly phenomenal, I didn’t expect such a good and creamy ice cream in such a short time. So I immediately thought of sharing the recipe with you. If we don’t consume it right away, it freezes in an ice cream container, just leave it a few minutes out of the freezer before serving, good and creamy as if just made.

  • 13.5 oz coconut milk
  • 0.5 cup water
  • 0.5 cup sugar
  • 1.75 oz coconut flour (grated dried coconut)

Steps to prepare coconut ice cream

  • In a small pot, put the sugar with the water, and bring to a boil, until the sugar is completely dissolved.

  • Transfer the syrup into the jar of the ice cream maker, let it cool, even in the fridge to speed up, or in the freezer.

  • Add to the cooled or just warm syrup the coconut milk, a whole can of 13.5 oz.

  • I added coconut flour for extra coconut flavor and body to the ice cream, but this is optional.

  • Transfer the bowl into the ice cream maker and start the ice cream maker, I used the self-freezing Medion ice cream maker. Just start it, and it will do everything on its own.
