First, wash the quinces thoroughly and grate them. To prevent them from browning, occasionally put some lemon juice on top. In a saucepan, put the water, the sugar, and let it dissolve
then add the grated quinces. Cook for about an hour, stirring occasionally. At the end, add some vanilla, cinnamon, or other aromas to taste.
Once the desired thickness is reached, put it immediately into previously sterilized jars then seal well and turn them upside down to achieve a vacuum effect. If you want to store it for a longer period, boil the jars again once cooled for about 20/30 min.
