Microwave Zucchini Roll

Microwave zucchini roll, a one-dish meal with zucchini and potatoes, perfect for the summer season. I love making vegetable rolls in the microwave; they cook quickly, can be prepared in advance, and are liked by everyone. Like this microwave omelet roll, or this spinach roll or, again, this delicious beetroot roll. In this case, I used grated potatoes and zucchinis, eggs, flour, and once this kind of microwave zucchini pancake was cooked, I filled it with ham and cream cheese. As you can see in the step-by-step photos, I used a square (Crisp) baking dish, but I also thought about those who do not have a microwave suitable for square dishes. I hope I have been helpful. Ingredients for making the zucchini and potato roll in the microwave

  • 9.17 oz zucchini
  • 9.88 oz potatoes
  • 4 eggs
  • 3 tablespoons all-purpose flour
  • 1 tablespoon grated Grana Padano cheese
  • 3 pinches salt
  • extra virgin olive oil (to grease the pan)
  • 3 slices cooked ham
  • 2 tablespoons cream cheese

What you need to make the roll in the microwave

  • 1 Microwave oven with combined microwave+grill function
  • 1 Microwave baking dish square and heat-conductive material
  • 1 Grater with large holes
  • 1 Bowl
  • Parchment paper
  • 1 Non-stick baking dish for round microwave

Procedure

  • Wash and trim the zucchinis. Peel the potato and grate everything with the large-hole grater. Gather everything in the bowl and add the eggs, grated cheese, salt, and flour. Mix well.

  • Brush the pan with oil and pour the mixture. Level the mixture with the back of a spoon, avoiding empty spaces. Place the pan in the microwave and start cooking for 12 minutes with the combined microwave + grill function (or Crisp). At the end of cooking, flip the roll base onto a sheet of parchment paper.

  • Spread with cream cheese and fill with ham slices. With the help of the parchment paper, roll up tightly. Finally, roll the same parchment paper around it and seal by twisting the ends. Let the roll rest for at least 15 minutes, then remove the paper, cut into 2 cm thick slices, and serve.

  • Using a 10-inch pan, you will need to halve the ingredient quantities. Follow the recipe, cooking the zucchini pancake for 12 minutes with the combined function. Then, flip it onto a plate and fill half with ham, tomato, basil, and lettuce. Fold the empty half over the filling, then cut into 3 wedges.

  • Serve immediately or after letting it cool for 10-15 minutes.

Rosella’s Tips

The roll base can be stored in the refrigerator, wrapped in plastic wrap, for 2-3 days. Once filled, I recommend consuming it within the day. If you prefer, you can enjoy it cold.
