Fried Sweet Ravioli with Ricotta and Chocolate Cream, so delicious you can’t stop at one

Every time I make Carnival Chiacchiere, I always also make Fried Sweet Ravioli with Ricotta and Chocolate Cream, the dough is practically the same. For the filling, I used ricotta with chocolate chips, but you can also use jam or Nutella.

I always fry them, but they are also delicious baked. Try them.

Ingredients

  • 10.5 oz chiacchiere dough
  • 8.8 oz ricotta (I use sheep milk ricotta)
  • zest of 1 lemon
  • to taste chocolate chips
  • 2 tablespoons sugar

Steps

  • The first thing to do is to prepare the chiacchiere dough, wrap it with plastic wrap, and let it rest in the fridge for about 30 minutes.

  • Now let’s prepare the cream. In a bowl, put the ricotta, sugar, and chocolate chips and mix.

  • Add the lemon zest and mix again. Let it rest in the fridge until ready to use.

  • Take small pieces of dough and roll them out with our pasta roller. If desired, a rolling pin can also be used.

  • Place a bit of ricotta cream in the center of each pasta strip.

  • Cover with another strip of pasta and use the pasta cutter wheel to form the ravioli. Fry in hot oil and once cooled, sprinkle with powdered sugar.
