Ingredients for Salmon and Philadelphia Tartare

  • 9 oz salmon (previously frozen (sushi-grade))
  • 9 oz spreadable cheese (type: Philadelphia)
  • 3 tbsp lemon juice
  • 2 tbsp chopped parsley (fresh)
  • 6 slices bread
  • 3 tbsp extra virgin olive oil
  • to taste salt
  • to taste pepper

Steps for Salmon and Philadelphia Tartare

  • 1. Cut the salmon into cubes
    With a very sharp knife, cut the salmon into small, even cubes. The more precise the cut, the more beautiful your tartare will look. You can also buy salmon already in pieces; the important thing is that it is previously frozen (sushi-grade).
    2. Season gently
    Put the salmon cubes in a bowl and dress them with a drizzle of extra virgin olive oil, a few drops of lemon or lime juice, a pinch of salt and, if you like, a little black pepper. Add the chopped fresh parsley as well. Mix gently so as not to damage the cubes.
    3. Let it marinate for a few minutes
    While you prepare the plating, your salmon will already be fragrant and ready in about 10 minutes.
    4. Toast the bread slices
    On a hot grill, toast the bread on both sides without burning it, then let it cool completely.

    5. Prepare the spreadable cream

    Put the spreadable cheese into a piping bag or pastry syringe fitted with a star tip and pipe small rosettes onto each toasted bread slice. This base will give creaminess and perfectly balance the freshness of the salmon.
    5. Assemble the tartare creatively
    Place a generous spoonful of tartare on each crostini. Decorate as you like — for example, use thin slices of avocado, sesame seeds, edible flowers or aromatic herbs. The effect will be spectacular!
