I wanted to try something different from the usual cutlets, and I came across a red coating idea on Instagram that immediately stands out for its color and crunchiness. It was proposed by Beniamino Baleotti, known online as the King of Sfoglia, a fantastic cook and a person of great sensitivity and friendliness, who often shares simple but impressive and delicious recipes!
It intrigued me, and I decided to make it my way, using chicken strips and cooking them in the air fryer for a lighter version.
The result? A tasty, flavorful main course ready in minutes and perfect for the whole family.
The coating is prepared in a jiffy with breadcrumbs, Parmesan, tomato, and a mix of aromatic herbs that provide aroma and taste. Try them too: they’re ideal for a quick dinner but also make a great impression at a buffet or served as finger food.
A mixed salad with mesclun and maybe dried fruits and peaches as a side dish and we’re ready for lunch/dinner!

Ingredients
- 9 oz chicken breast (cut into strips)
- 1/3 cup breadcrumbs
- 1/6 cup grated Parmesan
- 2 tbsps tomato sauce
- 1 tsp tomato paste
- 1 pinch salt
- 1 pinch sage (freshly chopped)
- 1 pinch rosemary
- to taste extra virgin olive oil (for the air fryer)
- to taste pepper

Let’s Start with My Red Coating!
In a bowl, I mix the breadcrumbs, grated Parmesan, tomato paste, and the tomato sauce together.Add the chopped aromatic herbs and season with a pinch of salt, pepper, and EVOO.
I try to thoroughly blend all the ingredients to create a moist and compact coating.

Then pass each chicken strip through the coating, pressing well with your hands to make it adhere best.Now place the red-coated strips in the basket of the air fryer already lined with perforated parchment paper, the one specific for the air fryer.
Spray with a little oil spray and let cook at 392°F for about 12/14 minutes, checking halfway and turning the chicken strips.
They should be golden and crispy.Hooray, we’re ready to go to the table!

Advice and Storage
• If you want a more compact and enveloping coating, you can leave the strips in the fridge for 10 minutes before cooking (I almost forgot them).
• You can store them for 1 day in the refrigerator, or freeze raw for 2 months if well stored in a freezer bag or airtight container.
