Crispy Strips with Red Breadcrumbs in Air Fryer

I wanted to try something different from the usual cutlets, and I stumbled upon a really unique idea on Instagram: a red breadcrumb coating that immediately catches your eye with its color and crunchiness. It was proposed by Beniamino Baleotti, known online as the King of Dough, a fantastic cook and a person of great sensitivity and friendliness, who often shares simple yet impressive and tasty recipes!
It piqued my curiosity, and I decided to make it my way, using chicken strips and cooking them in an air fryer for a lighter version.

The result? A delicious, flavorful main course, ready in just a few minutes and perfect for the whole family.
The breadcrumb coating is prepared in a flash with breadcrumbs, parmesan, tomato, and a mix of aromatic herbs that add aroma and flavor. Try them too: they’re ideal for a quick dinner but also make a great impression at a buffet or served as FINGER FOOD.

A mixed salad with greens and maybe some nuts and peaches as a side, and we’re ready for lunch/dinner!

  • Difficulty: Very Easy
  • Cost: Very Cheap
  • Preparation time: 10 Minutes
  • Portions: 2
  • Cooking methods: Air Frying
  • Cuisine: Italian
  • Seasonality: All Seasons

Ingredients

  • 0.55 lbs chicken breast (cut into strips)
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan
  • 2 tbsps tomato sauce
  • 1 tsp tomato paste
  • 1 pinch salt
  • 1 pinch sage (freshly chopped)
  • 1 pinch rosemary
  • as needed extra virgin olive oil (for the air fryer)
  • as needed pepper

Tools

  • Air Fryers
  • Cutting Boards
  • Knives
  • Parchment Paper

Let’s Start with My Red Breadcrumb Coating!

  • In a bowl, I mix together the breadcrumbs, grated parmesan, tomato paste, and the tomato sauce.

Add the aromatic herbs washed and chopped, and season with a pinch of salt, pepper, and evo oil.

I try to thoroughly mix all the ingredients to create a moist and compact breadcrumb coating.

    The quantities are indicative, remember…

  • Then pass each chicken strip in the coating, pressing well with your hands to make it adhere better.

  • Now I place the coated red strips in the basket of the air fryer already lined with perforated parchment paper, specifically for the air fryer.
Spray lightly with oil and let them cook at 392°F (200°C) for about 12/14 minutes, checking halfway and turning the chicken strips.
They should be golden and crispy.

  • Hooray, we’re ready to sit at the table!
Serve immediately, hot and crispy red breadcrumb coated strips accompanied by a fresh salad or baked potatoes if you have kids at the table.

Enjoy your meal and happy cooking! Annalisa

Tips and Storage

• If you want a more compact and enveloping breadcrumb coating, you can leave the strips in the fridge for 10 minutes before cooking (I almost forgot them).

• You can store them for 1 day in the refrigerator, or freeze them raw for 2 months if well preserved in a freezer bag or airtight container.
