If you use fresh yeast, calculate three times the amount of dry yeast and dissolve it in the mixture of warm water and milk. If you don’t have a planetary mixer, you can easily work the dough by hand in a bowl, first using a fork and then transferring it to a work surface once the dough has gained some consistency. Knead it until it becomes smooth and homogeneous.
