Today we’ll make a very delicious salad with ham and green beans, ingredients I absolutely love because, with little seasoning, they can make for an exceptional light lunch.
To add color to the salad, I’ve also added tomatoes which make it complete. Boiled eggs can be omitted to satisfy those who love vegetarian cuisine. Otherwise, you can substitute the ham with smoked salmon.

Summer Rice Salad with Ham and Green Beans
- 1 1/2 cups rice for salads
- 1 cup sweet corn, canned, drained
- 1 cup cherry tomatoes
- 4 eggs
- 5 oz cooked ham (single slice then diced)
- 1 cup green beans
- to taste extra virgin olive oil
- salt
- to taste basil

Steps
Summer Rice Salad with Ham and Green Beans
Pour water into a pot, add salt, and heat. Once it starts boiling, add the rice and cook according to the package instructions, ensuring it’s al dente.
(Check the package and adjust according to the instructions).
Once the rice is cooked.
Let the rice cool down or, if you’re in a hurry, rinse it in cold water.
Separately cook the eggs
Eggs boil in 6-7 minutes if you prefer them soft, 8-9 minutes if you want them hard-boiled.
Cut them into pieces.
Keep one hard-boiled egg for decoration.
Meanwhile, dice the ingredients. Once finished, set aside in a bowl.
Boil the green beans in plenty of salted water, chop them, and add them to the bowl with the diced ham.
Cut the cherry tomatoes into quarters and then into small pieces, and drain the corn.
Also, add the hard-boiled eggs.
When all the ingredients are ready, you can proceed with the salad preparation.
Place the rice in a bowl, add the vegetables, and diced ham.
Drizzle with olive oil and mix everything well.
Your rice salad is ready, serve it with the hard-boiled eggs sliced or wedged.

Tips
The rice salad can be stored in the refrigerator for up to 2-3 days.
Especially when the weather is very hot, it’s preferable to keep the salad in the fridge even if you plan to serve it shortly after, to give it an even fresher touch.
