  • 2 eggs

  • In a bowl, mix zucchini, eggs, flour, parmesan if you like, and salt. You should get a soft but not too liquid mixture.

  • Pour the mixture into a baking tray lined with parchment paper, oil it, level it well, and bake in a static oven at 356°F for 20-25 minutes, until the base is golden and compact, or in an air fryer at 347°F for 15 minutes.

  • Remove from the oven, season with tomato sauce and oil, salt, oregano, provola slices, and speck, put back in the oven for 5 minutes.

  • Remove from the oven, add arugula, and serve.
