  • First, wash the eggplants and then slice them, they should not be thin, arrange them on a plate and add coarse salt, let them rest for at least 15 minutes. Heat a grill pan well on the stove and start cooking the eggplants but first, remove the excess salt. Blend some oil with parsley, salt, and if you like, a piece of garlic, blend everything until you get a compact consistency that you will brush on all the eggplants, add fresh parsley and if you want, chili pepper. TIPS

The rest with salt is essential because it removes the water from the eggplants so they will remain soft and not dry, do not cut the eggplants into slices that are too thin otherwise they will have no consistency.
