The pumpkin frittata is a simple and tasty dish, perfect for a quick and light dinner, but also for an aperitif different from the usual.

You can enrich the pumpkin frittata with diced potatoes but also with olives or peas.

Ingredients
- 10.5 oz pumpkin
- 1 tbsp vegetable oil
- 4 eggs
- 2.8 oz grated parmesan cheese
- Half cup milk
- to taste salt
- to taste black pepper

Steps
Peel the pumpkin, wash it and cut it into cubes. In a skillet, heat a tablespoon of extra virgin olive oil. Add the pumpkin, salt, and cook covered for about 10 minutes, until it is soft.
Meanwhile, crack the eggs into a bowl, add the grated parmesan, the milk, salt, and pepper to taste and beat with a whisk until you have a homogeneous mixture.
Pour the egg mixture into the skillet with the cooked pumpkin, level it with the back of a spoon, and cover with a lid.
Cook over medium heat for about 10 minutes on each side. To perform this operation without breaking the frittata, I recommend using a flip skillet.
