Steps

  • Clean the asparagus with a vegetable peeler from the middle downwards, trimming off a good portion. Wash them and boil in a little water for 10 minutes

  • Prepare the fake mayonnaise like this: in a bowl, mix the Greek yogurt with the paprika, salt, and olive oil using the whisk to combine all the ingredients.

  • Place the steamed asparagus on a serving plate and the fake mayonnaise in a small bowl beside it, serve with plenty of freshly ground black pepper.

Asparagus and how to store them

When preparing asparagus, I always select a portion to cut into small pieces and freeze for a future risotto or pasta, very handy. The more woody section I boil in plenty of water for at least half an hour, covered over medium heat and then strain the resulting broth to use in other preparations.
