First, wash, clean, and slice the zucchini thinly. Form squares on the baking tray lined with parchment paper. Add a little salt
grate the scamorza cheese on top. Drizzle some oil over and bake at 356°F for about 10 minutes. Once baked and cooled, flip our squares and fill as desired.

Storage:
If there are leftovers, you can store them in the refrigerator, in an airtight container, for up to 2 days. When it’s time to serve them, heat them in the oven at 356°F for about 5-7 minutes, so they become crispy again. Freezing is not recommended as the zucchini tend to release water and lose texture.
