  • 4 eggs
  • 10.5 oz potatoes (peeled weight)
  • 1.5 oz Parmesan cheese
  • 0.7 oz all-purpose flour
  • salt
  • pepper
  • to taste olive oil

Steps

Grandma’s Potato Fritters

  • Peel the potatoes and dice them, rinse and dry them well, otherwise, they will splatter when you fry them.

  • Pour the oil into a non-stick pan and heat it, fry the potatoes a little at a time and once cooked, put them in a bowl with kitchen paper underneath to absorb the excess oil.

    Let cool.

  • In a bowl, crack the eggs, add the fried potatoes, flour, cheese, and season with salt and pepper.

  • Use a large spoon or ladle and pour a bit of the mixture into the pan with already hot oil.

    Let it cook on one side for a couple of minutes, once it has set, flip it over and finish cooking.

    Air fryer cooking. Cook the fritter at 356°F (180°C) for about 5/6 minutes. Depending on the power of the air fryer, the cooking may require a few more or fewer minutes. In general, the fritter is ready when it is golden on the surface.

Tips

My potato fritters are easy and require few ingredients, but if you like, we can add more and customize the recipe, such as spices and herbs beaten with the eggs to flavor them, or add some Pecorino cheese.

But you can also enrich it with cold cuts to make it more substantial. The ideal is to use diced ones: sweet or smoked bacon, speck, cooked ham will go perfectly.

To keep it vegetarian, however, we can make a potato and onion fritter or cook some thinly sliced or diced vegetables along with the potatoes.
