  • This is one of the very few fish that is not cleaned at the fish market, which is why it sells very little, yet it is worth much more than its cost for its many properties, starting with the proteins and vitamins it is rich in, and it is also low in fats. It is preserved in salt, oil, and spicy sauces, they are eaten cooked but anchovies are also very appreciated raw after the necessary precautions such as freezing in special freezers.

    After cleaning them by removing the innards and head, wash the anchovies and dry them with paper towels.
