  • 3/4 cup sugar
  • 2 cups mascarpone
  • 1 1/4 cups all-purpose flour
  • 3 eggs
  • 10.5 oz strawberries
  • to taste lemon zest
  • to taste vanilla powdered sugar

How to Make Strawberry and Mascarpone Cake

  • In a large bowl, pour the mascarpone, add the sugar and grated lemon zest.

  • Then mix everything with the mixer, then add one egg at a time, then incorporate the all-purpose flour.

  • At this point, chop the strawberries and add them to the batter.

  • Pour everything into a 9-inch springform pan, well buttered. Then arrange some larger strawberry slices on top as garnish.

  • Preheat the oven to 350°F and bake your strawberry and mascarpone cake in static mode for about 45-50 minutes.

  • At the end, take it out of the oven and let it cool on a cake rack. Dust liberally with vanilla powdered sugar.

This type of preparation can be safely stored outside the fridge, but under a cake dome for up to 2-3 days. As for freezing, it is possible but not recommended as it would lose all its fragrance.
