Apple and Cinnamon Cake

The Apple Cake has a large number of variations, each family has its own recipe and even the quality of the apples changes. Usually the most used are golden and renette, very different from each other. I prefer to use Golden Delicious which are sweeter and more fragrant. Here I explain how to prepare this Apple and Cinnamon Cake, the first I learned to make.

Ingredients

  • 1 cup g sugar
  • 2 cups g all-purpose flour
  • 3 eggs
  • 1/3 cup g potato starch
  • 1 packet baking powder
  • 1 tsp lemon zest (grated)
  • Half vanilla bean
  • 7 tbsp g butter
  • 4 Golden Delicious apples
  • 1 pinch fine salt
  • 1/4 cup g brown sugar
  • 2 tsps ground cinnamon

Steps

Preheat the oven to 350°F static mode

  • With the whisks or a stand mixer, beat the eggs well with the granulated sugar, then gradually add the sifted flour, baking powder, and starch. Add the grated lemon zest, a pinch of salt, the vanilla bean pulp, and mix with a spatula from bottom to top to avoid deflating the mixture.

  • Lastly, gradually add the cooled melted butter. Incorporate into the dough 2 apples cut into large cubes. Pour into a buttered and floured pan or lined with baking paper, level it, and arrange the other 2 apples cut into slices in a radial pattern. Sprinkle with cinnamon and brown sugar. Bake at mid-height and cook for 45 minutes. Turn off the oven and leave the cake in the oven with the door ajar for another 5 minutes, then remove and wait for it to cool before removing it from the pan.
