The savory muesli is a crunchy and tasty mix to use for garnishing and flavoring salads. Composed of oat flakes, dried fruits, mixed seeds, thyme, and extra virgin olive oil. Once this mix is prepared, spread it on a baking sheet and toast for 20 minutes at medium heat. Naturally, the ingredients can be varied to your liking; instead of oats, you can use spelt flakes or quinoa, for the seeds you can use flax, sesame, pumpkin, and sunflower seeds, and the same goes for the nuts. I have flavored with fresh thyme, but chopped rosemary, sage, marjoram are also fine. The savory muesli can be stored once well cooled in a jar in a cool, dry place for up to 2 months. They can also be used as breading after being slightly ground. By using certified gluten-free ingredients, it can also be consumed by people intolerant to gluten.

Ingredients
- 3.5 cups whole grain oat flakes
- 1.75 cups nuts
- 1 tbsp sunflower seeds
- 1 tbsp pumpkin seeds
- 1 tbsp sesame seeds
- 3 tbsp extra virgin olive oil
- 1 tsp salt
- 3 sprigs thyme

Steps
Coarsely chop the nuts.
Combine all ingredients in a bowl.
Mix well and spread on a baking sheet lined with parchment paper.
Toast in a preheated static oven at 320°F for about 20 minutes or until golden.
Remove from oven and let cool.
Transfer to a jar and store in a cool, dry place.
Tips
It keeps for up to 2 months.
FAQ
How can I substitute extra virgin olive oil?
You can replace it with animal fat like duck fat, ghee, or clarified butter. Alternatively, coconut oil.
