INVISIBLE ZUCCHINI CAKE in the microwave, a quick alternative to the omelette, a sort of zucchini savory cake in the microwave, made with eggs, flour, and instant yeast. You know how energy-conscious I am, and this cake cooks in just 15 minutes, without preheating the oven and heating the house.
Unlike the zucchini omelette or the vegetable omelette in the microwave, for this invisible zucchini cake, there’s no need to precook anything; just slice the zucchinis very thinly with a slicer and mix the few ingredients so you can serve a healthy and tasty second course. To cook the invisible zucchini omelette in the microwave, I used a heating pot (or Craftina) to give it that crust we love so much. Ingredients to Make the Invisible Zucchini Cake
- 3 zucchini (large)
- 2 eggs
- 1.75 oz grated Parmesan cheese
- 3/4 cup rice flour
- 2 tsp instant yeast for savory preparations
- 2 pinches salt
- 4 leaves basil
What You Need to Make Invisible Cake in the Microwave
- 1 Microwave Oven preferably combined
- 1 Pot microwave heater
- 1 Mandoline
- 1 Bowl
- 1 Oil Spray
Procedure
Wash the zucchini well and trim them. Use a mandoline to slice them into thin rounds and set them aside.
In a bowl, crack the eggs, add grated cheese, rice flour, yeast for savory cakes, torn basil leaves, salt, and mix well.
Add the zucchini rounds and mix them into the batter.
After greasing the bottom of the heating pot, pour in the mixture, level it with a spatula, and spray it with a little oil.
Set your microwave to the combined microwave + grill function, place the pot inside, and cook for 15 minutes.
After cooking, remove the cake from the pot, and you can serve it immediately or let it cool on a wire rack and serve it warm or cold.
