  • 3 oz egg whites (room temperature)
  • 1.76 oz erythritol
  • 5.29 oz hazelnut flour
  • 1.76 oz chopped hazelnuts
  • 1 vanilla bean (seeds only)

How to Make Ugly but Good Without Sugar – Keto Recipe

  • In a bowl, start whipping the egg whites with the electric whisk; when foam begins to form, add the erythritol sweetener with the whisk still moving, and achieve stiff peaks.

  • Add the hazelnut flour and chopped hazelnuts, and gently mix with a spatula from bottom to top. Transfer the mixture to a pan and heat over low flame, continuously stirring for about ten minutes until the dough becomes compact and darker.

  • Prepare a baking sheet lined with parchment paper, and place small heaps of dough using a spoon, trying to make them more or less the same size.

    Bake in the oven at 300°F for 20 minutes. Once ready, remove them from the oven and let them cool before serving.

Storage and Tips

You can store them in a tin box or glass jar for up to a week.

Use room temperature egg whites so they will whip up quickly.

You can use any type of nuts, like walnuts, pine nuts, almonds or you can mix them together.
