Ingredients

  • 12 slices of very thin pork loin
  • 2 large zucchinis
  • 12 slices of speck
  • 2 eggs
  • 4 tablespoons of extra virgin olive oil
  • to taste of salt
  • to taste of garlic powder
  • to taste of breadcrumbs

Steps

  • Wash the zucchinis and use a mandoline to slice them into thin slices.

  • Salt the zucchini slices.

  • We use thin pork loin slices

  • Season with salt and garlic powder.

  • Start assembling the rolls starting with a slice of zucchini, place a slice of pork loin on top, and finish by covering with a slice of speck.

  • Roll everything up.

  • Dip the rolls first in the egg and then in the breadcrumbs.

  • Place the rolls in the air fryer basket and season with two tablespoons of extra virgin olive oil.

  • Cook at 356°F for 20 minutes, after 10 minutes open the basket to turn the rolls for even cooking, season with the other 2 tablespoons of oil.
