Today I made lard. Every year I stock up and then use it throughout the year, especially for my sweet preparations. Homemade lard can comfortably replace butter in Classic Shortbread or Whipped Shortbread Cookies naturally it depends on taste. You will decide whether to replace it entirely or just a part. We in Sardinia use it for various recipes. It’s also good in pizza instead of oil. You can also use it for frying, but I recommend only occasionally, or your cholesterol will take off ahahaha. Below I leave you some recipes with lard.

Ingredients
- 2.2 lbs pork fat
- 1 tsp fine salt

- Saucepan
- Ladle
- Jars glass
Steps
Cut the pork fat into cubes and pour it into a saucepan.
Add the salt and bring to the heat for about 30 minutes on high flame. The fat must melt and turn a nice golden color.
With a ladle, drain the cracklings obtained on absorbent paper.
Jar the lard, trying not to take from the bottom of the saucepan.
Let it cool for a couple of hours.
The lard is ready when it becomes white. At this point, store it in the pantry and use it for your preparations.
