Bresaola carpaccio is delicious and is enjoyed with pleasure on hot summer days, but it’s so good that it’s also great all year round, and can’t be missed during the holidays. It is made in a moment and is always loved by everyone. You can add some nuts and a bit of honey; here, however, I’ve used lemon juice to make it even fresher since it’s still very hot here in Calabria. - 3.5 oz bresaola punta d'anca
- 1 cups arugula
- 1.75 oz Parmesan cheese shavings
- 3.5 oz yellow cherry tomatoes
- to taste olive oil

Bresaola Carpaccio Preparation Steps
Arrange the bresaola slices on a plate or platter to form a kind of blossomed rose.
On a cutting board chop the arugula a bit if the leaves are too long. Add the arugula and Parmesan cheese shavings on the bresaola.
Season with a little lemon juice and oil. If you want, you can add almonds, walnuts, or pistachios, and also a bit of honey and salt. I haven’t added any since the bresaola and Parmesan are already quite salty.
To enrich our bresaola carpaccio, cut the cherry tomatoes into quarters and add them to complete our dish. Here you can add a little olive oil and salt or even a bit of balsamic glaze. I haven’t added anything to fully enjoy the pure sweetness and deliciousness of the yellow cherry tomatoes.
