Ingredients

  • 1 3/4 cups pasta
  • 4 oz Italian frying peppers
  • 1 sausage
  • 1 clove garlic
  • 1 leaf bay leaf
  • 1/4 cup dry white wine
  • extra virgin olive oil
  • salt
  • pepper

Preparation

  • Peel the sausage and crumble it with your hands inside a non-stick pan. Brown it for a few minutes without adding oil, then add the bay leaf, pour in a quarter cup of dry white wine and let the alcohol evaporate.

  • Turn off the heat, transfer the sausage with its juices to a plate, and set aside.

    Wash the Italian frying peppers and clean them by removing the stem and seeds. Cut them into pieces and put them in the same pan, adding a dash of olive oil and a clove of garlic.

  • Add salt and pepper, cook them over high heat for a few minutes until browned. Add the sausage and stir.

  • Boil the pasta in salted boiling water, drain it rather al dente and add it to the pan with the sauce.

    Sauté the pasta for a couple of minutes, or until it is cooked to your liking, adding some tablespoons of cooking water as needed.

You can use any type of semolina pasta, short or long, or egg pasta.
