For preparation, just sauté the speck in a pan with a drizzle of oil and in the meantime cook the pasta. I chose trofie, but you can use your preferred type of pasta.
Once the pasta is cooked, just toss it in the pan with the speck and pesto.

- 1 1/2 cups trofie (fresh semolina)
- 3 1/2 oz speck (sliced into strips)
- 3 tbsp pesto
- 1 drizzle extra virgin olive oil

How to Prepare Pasta with Pesto and Speck
In a large pan, pour a drizzle of extra virgin olive oil. Add the speck strips and sauté for about 3/4 minutes, until golden and crispy.
In a large pot, bring plenty of salted water to a boil and cook the trofie according to the cooking time indicated on the package (usually 4/5 minutes for fresh trofie). Once cooked, drain the pasta and set aside a little pasta cooking water.
Add the drained pasta to the pan with the speck and mix well. Add the pesto and mix. (If necessary, add a little pasta cooking water).
Plate and if desired add a sprinkle of fresh black pepper.
Serve this simple and delicious dish immediately!

The dish can be stored in the refrigerator for one day, but it is best consumed immediately to enjoy it at its best.
