Ingredients
Stuffed Horn Peppers
- 8 bull's horn peppers (yellow and red)
- 11.3 oz stale bread
- 5.3 oz cherry tomatoes
- 2 teaspoons capers
- 5 fillets anchovies in oil
- to taste black olives (pitted)
- to taste extra virgin olive oil
- 1 clove garlic
- 2 tablespoons Parmesan
- to taste basil (or parsley)
- salt

Steps
Stuffed Horn Peppers
Wash and dry the peppers well.
With a knife, cut into the peppers, remove the top and the stem by removing the central part with the seeds.In a bowl, add: stale bread, grated Parmesan, finely chopped garlic clove, ripe cherry tomatoes cut and mixed.
Finely chop the capers, olives, and anchovies.
Incorporate it into the bread mixture.
Mix everything well.
Use your hands to mix the ingredients well.
Taste, and if necessary, add more salt.
Now all you have to do is fill all the peppers using a teaspoon, pressing the inside well with your hands without breaking them.
Place the peppers on parchment paper; during the cooking, the pepper softens by flattening.
Oil the outside of the peppers well and pierce them with a toothpick and oven bake (ventilated) at 356°F for about 30/35 minutes (depends on the size of the pepper).
Cooking in the air fryer. Place the peppers in the air fryer basket lined with suitable parchment paper (if you don’t have it, it’s not a problem); spray with a little oil and cook for about 15/20 minutes at 374°F.
They need to form a crust, so if necessary, allow for a few more minutes.(I want to remind you that every air fryer and oven has its own times, so check).

Tips
The stuffed tuna peppers can be stored in the fridge for 2 days, closed well in an airtight container. I recommend heating them or letting them sit at room temperature before consuming.
You can skip the Parmesan and replace it with pecorino.
