Ingredients

  • 2 chicken legs
  • 1/4 cup white wine
  • 0.7 oz clarified butter (or olive oil)
  • 2 sprigs rosemary
  • 1 clove garlic

Steps

  • Heat the oil in a large pan, add garlic and rosemary, put the chicken legs in and brown them well on all sides (about 10 min).

  • Pour the white wine and let it evaporate over high heat.

  • Cover with a lid, lower the heat and cook for about 30-35 min, turning occasionally. If necessary, add a little water or broth.

  • At the end of cooking, remove the lid and increase the heat to reduce the cooking juices and make the skin crispy.

  • If you prefer a creamy sauce, add a bit of rice flour as I did.
