How to make no-bake cookie truffles.
Put the cookies and ricotta into the food processor cup. Blend until a cream is formed. Place the container in the fridge for about half an hour to firm up the cream, and in the meantime, melt the two types of chocolate in the microwave or bain-marie.
– After the time has elapsed, line a tray with parchment paper and with slightly damp hands, form balls slightly larger than a walnut.
– Dip the truffles into the two types of chocolate, and just before the chocolate solidifies, decorate the surface of the truffles with a few colored sugars.
Tips and storage:
– For a better aesthetic result, trim the edges of the truffles when the chocolate is completely solidified. Store in the fridge for no more than 3 days.
