Meatloaf with asparagus, a tasty and simple main course to prepare.
Ground beef allows us to create many recipes using an infinite number of ingredients. This type of meat is ideal for sauces to dress pasta but also for making meatballs, meatloaves, or stuffed vegetables such as eggplants, zucchinis, and peppers. On this occasion, I wanted to make it the main ingredient by cooking a meatloaf and stuffing it with asparagus. The latter, with their unmistakable flavor, provided the necessary contribution for the excellent outcome of this delicious main course. Compared to the classic meatloaf, in addition to asparagus, I used a vegetable and onion broth to keep it always moist even during cooking, which I did on the gas stove in a pot. I assure you that the whole house smelled wonderful, and we couldn’t wait to eat it.

Ingredients for Meatloaf with Asparagus
- 9 oz beef
- 9 oz pork
- 3 eggs
- 1 cup bread (Crumbled)
- 2 oz grated Parmesan cheese
- 10 frozen asparagus (2 for the sauté)
- to taste salt
- parsley
- mint
- 1 garlic
- to taste extra virgin olive oil

Steps for Meatloaf with Asparagus
Preparing meatloaf with asparagus is really quite simple.
Take a bowl and add the ground meat, salt, crumbled stale bread, minced or powdered garlic, grated Parmesan cheese, mint, and chopped parsley.
Add the eggs.
Mix everything with a simple fork.
On a work surface, place a sheet of parchment paper. Transfer the mixture to the center of the sheet and, with the help of your hands, form a rectangle.
Meanwhile, in a pan with a drizzle of oil, sauté the asparagus for a few minutes.
Place the asparagus in the center and gently roll the meat onto itself, forming a roll.
Take a pan and sauté the meatloaf by flipping it without breaking it.
Meanwhile, in a large and tall pot, sauté the onion and asparagus cut into small pieces for a few minutes.
Add boiling water and let it cook slowly for about an hour.
Place your meatloaf on a serving plate.
All that’s left is to eat it, adding a bit of sauce on top.
