On the occasion of Roast Chicken Day and Grandparents’ Day, there is no better way to celebrate than with a classic and beloved dish: roast chicken with new potatoes.

To prepare this recipe, I asked for help from my mom, a super modern grandma who only knows one word with her grandchildren. Yes.

However, no one makes roast chicken like she does. So, I decided to share her recipe with you. In fact, the chicken prepared by her.

Ingredients

  • 1 chicken (whole, approximately 2.2 lbs)
  • 1.1 lbs new potatoes (pre-cooked)
  • to taste roast seasonings
  • 1 glass white wine
  • Half glass water
  • 4 tbsps extra virgin olive oil
  • 1 sprig rosemary
  • to taste salt

Steps

  • Preheat the oven to 375 degrees Fahrenheit.

    Wash the chicken and dry it with paper towels.

    Brush extra virgin olive oil all over the chicken, both inside and out.

    Sprinkle with roast seasonings and a pinch of salt. Insert a sprig of rosemary inside the chicken for added flavor.

  • In a ceramic or glass baking dish, pour 3 tablespoons of extra virgin olive oil. Place the chicken and pour half a glass of water and a glass of white wine.

    Put it in the oven and let it cook for about 1 hour, turning it halfway through the cooking to brown both sides. During the cooking, collect the juices forming in the dish and baste the chicken occasionally, so it doesn’t dry out.

  • Meanwhile, place the pre-cooked new potatoes in another baking dish and season with salt, extra virgin olive oil, and roast seasonings. When there are about 30 minutes left for the chicken to finish cooking, put them in the oven and let them cook. If you wish, you can cook the potatoes directly in the chicken dish.

  • At this point, check that the chicken is well-cooked, ensuring the meat near the bone is white, and the juices run clear.
