Carnival Coconut Cookies

Today, I am sharing the recipe for these beautiful carnival coconut cookies, a simple, colorful, and tasty treat.

Making these cookies is really simple: it only takes 5 minutes to prepare the dough, and after forming many balls, roll them in colorful sprinkles.

I wanted to make these cookies since I had a lot of expiring coconut flour in the pantry; just like with flour and eggs, every time I go to the supermarket, I always stock up for fear of running out.

These soft cookies are perfect for breakfast or a snack, but this year I wanted to use them as a Carnival gift that my daughter gave to her friends.

Ingredients for Carnival Coconut Cookies

  • 2 eggs
  • 5.6 oz sugar
  • 3/4 cup vegetable oil
  • 10.6 oz coconut flour
  • 0.28 oz baking powder
  • orange zest
  • sprinkles

Tools

  • 1 Bowl
  • 1 Whisk
  • 1 Grater

Steps for Carnival Coconut Cookies

  • In a bowl, add the eggs and sugar, and mix with a hand or electric whisk. Add the vegetable oil and the grated zest of one orange. Continue mixing for a few minutes.

    Add the coconut flour and baking powder.

  • Mix everything well; you should obtain a nice compact mixture.

    Form many balls and add colorful sprinkles on the surface.

    Place the balls on a baking tray lined with parchment paper, spaced apart.

    Preheat the oven to 392°F and bake the cookies for 20 minutes.

    Lower the temperature if you see the cookies browning on the surface.
