STORAGE
Homemade fresh pasta can be stored for one day outside the fridge in a cool, dry place.
You can dry tagliatelle or lasagna on a perforated rack or pasta drying rack for two to three days in a dry, ventilated place, and then store in paper food bags for up to 2 months.
If you wish, you can also freeze it, first spacing it out well and then gathering it in a freezer food bag for up to 8 months.
