Very Easy Christmas Wreath

Cute and all edible, the very easy Christmas wreath! To put as a centerpiece, it really prepares in a second.. just take the ready base for focaccia and give it a round shape.. bake and then fill.

It’s not a real recipe because it’s more about assembling the ingredients that can vary widely starting with salads, then decorating with olives, mozzarella balls, pomegranate seeds and whatever you like..

Easy, right?

Because at Christmas we have so much to do.. we have to think about shopping.. organize lunches and dinners.. buy gifts.. in short, it’s an intense period.. beautiful but also stressful! So if we manage to play ahead or do quick, cute, and good things.. we’re halfway there!

Ingredients

  • 1 package ready base for focaccia
  • 2 cups lamb's lettuce
  • 1.8 oz oz cherry tomatoes
  • 1 mandarin
  • 1 tablespoon extra virgin olive oil

Steps

Preheat the oven to 392°F

  • – Place the focaccia base on the oven tray, cut the center with a lid or saucer about 4-5 inches in diameter. Cut stars out of the scraps.

  • – Prick the bases with a fork and grease with a little oil. Bake for about 15 minutes.

  • – Meanwhile, rinse the salad, wash and cut the cherry tomatoes, peel the mandarin, and combine all the ingredients in a bowl. Add the oil and mix.

    – I do not add salt at this stage otherwise the tomatoes will release their water and then the base gets wet.

  • – Season the cooked and slightly cooled base with the vegetables and dough scraps. Salt to taste just before it is cut; or each guest can decide whether to salt or not.

Tips:

– Since the seasoning step is quite fast, I recommend doing it at the last moment so the aesthetics benefit.

  • – Can other types of salads be used?

    – Certainly; whichever you like best.

  • – Can I use puff pastry instead of the focaccia base?

    – Yes, you can use puff pastry or shortcrust pastry. The rule of seasoning at the last moment still applies, especially if you use puff pastry, as it quickly loses its crispness.
