Pasta with Italian Sweet Peppers and Sausage

Easy and tasty pasta with Italian sweet peppers and sausage. A rich, delicious, and colorful first course that we can put on the table on all occasions, and in which bread dipping is a must!

We can put it on the table in a short time. Perfect for everyday cooking but also for Sunday lunch, we can include it in all menus or serve it alone.

Prepare it in the summer when these sweet green peppers are available, to bring to the table a tasty but also rich and hearty dish that is much appreciated. You can replace the green peppers with regular peppers.

In Neapolitan tradition (and not only!), Italian sweet peppers are one of the most widespread vegetables in summer cooking.

They have an elongated shape ending in a point, reaching a maximum length of 3 to 3.5 inches, and are green in color. Contrary to what you might expect from the name, they are not spicy but very sweet.

These sweet peppers are indeed suitable for a variety of recipes, including appetizers, main courses, or second courses.

Pasta with Italian sweet peppers, tomatoes, and sausage has a surprising taste that will win you over at the first bite. 
 

Generally, Italian sweet peppers serve as a side dish for a main course, often a meat or fish dish.

Pasta with Italian Sweet Peppers and Sausage

  • 11.2 oz pasta (short or long)
  • 10.6 oz Italian sweet peppers (or bell peppers)
  • 1.1 lbs cherry tomatoes (or peeled tomatoes)
  • 3 sausages
  • 1 clove garlic
  • to taste extra virgin olive oil
  • salt
  • pepper
  • to taste parmesan (optional)
  • to taste basil

Steps

Pasta with Italian Sweet Peppers and Sausage

  • First, pour a swirl of extra virgin olive oil into a saucepan and let it heat up well. Add a garlic clove and let the oil become fragrant.
    As soon as the oil is heated and slightly flavored, add the sausage and brown it well. 

  • Meanwhile, prepare the rest of the ingredients: take the cherry tomatoes, cut them in half, and quarter the larger ones. 
    Remove seeds and inner filaments from the peppers, then chop them into pieces.

  • Once the sausage is browned, remove it from the pan and set it aside.

  • Place the cherry tomatoes and chopped Italian sweet peppers in the pan where you just browned the sausage. Season with a few basil leaves, add a pinch of salt, and let it cook.

  • Bring a large pot of water to a boil, and once it reaches a boil, salt it and add the pasta, letting it cook.

  • While the pasta is cooking, return the sausage to the pan with the cherry tomatoes and Italian sweet peppers, and remove the garlic clove from the sauce.

  • Cook the pasta until al dente, then drain it directly into the pan with the sauce.

    Toss for a few moments, ensuring everything is well-flavored.

  • Plate and serve with a sprinkle of grated cheese if desired.
