Ingredients
- 1.6 cups all-purpose flour
- 5.64 tbsps butter (softened)
- 0.4 cups sugar
- 1 egg (medium)
- 1 tsp baking powder
- 1 pinch salt
- 1 cup pears (peeled and cored)
- 0.35 oz butter
- 1 tbsp sugar
- 1 tbsp lemon juice
- 0.2 cups dark chocolate chips
For a 9-10 inch diameter baking pan, double all quantities.

Preparation
Start by preparing the pears: peel them, remove the core, and slice them. Put them in a small pan, add the 10 grams of butter, a tablespoon of sugar, and a tablespoon of lemon juice.
Cook over medium-low heat for about ten minutes, until the liquid has evaporated and thickened, and the pears are soft but still a bit firm.
Once done, remove from heat and let cool.
Meanwhile, prepare the mixture: place the softened butter in pieces and the sugar in the bowl of the stand mixer (or food processor). Mix with the paddle attachment (or blades) until a creamy texture is achieved.
Add the egg, lightly beaten with a pinch of salt, and mix well.
Then add the sifted flour with the baking powder. Mix quickly until a crumbly mixture is formed.
Line the baking pan with parchment paper, or butter and flour it.
Place about half of the mixture in the pan and lightly compact with your hands (1).
Add the previously cooked pears and the chocolate chips (2).
Finally, cover with the remaining mixture, without pressing the crumbs down (3). If desired, sprinkle with brown sugar or almond granules.
Place the dessert in a static oven at 350°F and bake for about 35 minutes, or until the surface is golden and dry. Adjust the time based on the characteristics of your oven.
The pear and chocolate crumble is ready, let it cool completely and sprinkle with powdered sugar as desired.
Advice and Notes
You can use any variety of pears you prefer, as long as the fruits are firm, not too ripe.
You can increase or decrease the amount of chocolate to your liking. You can chop a bar if you don’t have chips.
You can flavor the pears with a pinch of cinnamon or ginger.
