Today a savory recipe: no-yeast waffle flatbreads.
Sometimes I find myself without bread, and I realize it too late to make delicious homemade semi-whole grain bread, so I quickly mix these waffle flatbreads, made with simple ingredients we always have at home. With water, flour, olive oil, and baking powder we will get a delicious dough ready to cook after a very short rest, so no rising needed.
They cook in five minutes in the waffle iron to give them a fun shape, but they can also be cooked simply in a pan. They are great to eat with cured meats, cheeses, mortadella mousse, or grilled vegetables during a family dinner, perfect and fun to prepare for kids’ snacks or for savory breakfast with fried eggs and avocado sauce.
Crispy and tasty, these waffle flatbreads are very easy to prepare, but like all baked goods made with instant yeast, they tend to harden if eaten the next day, so I recommend making them just before eating or reheating them slightly.

Ingredients for 4 waffle flatbreads
- 1 2/3 cups all-purpose flour
- 1/2 cup water
- 2 tbsps olive oil
- 1 tbsp baking powder
- 1/3 tsp salt

- 1 Waffle Maker
- 1 Rolling Pin
Let’s prepare the waffle flatbreads together
In a bowl, mix the flour with the baking powder for savory cakes, then pour in the water and start kneading by hand, add the salt and knead again. Now add the olive oil and knead again; if you want, you can move to a work surface to be more comfortable, but in the bowl is also fine. Once you have a smooth and homogeneous dough, cover the bowl with plastic wrap (or a bowl cover) and let it rest for ten minutes.
Take the dough back and divide it into 4 equal parts, then form balls. Gently flatten them with your hands or using a rolling pin until you get a disk about 2 inches in diameter.
Turn on the waffle maker and wait for it to heat up, when it has reached temperature open the plate and place a flattened ball in each waffle section, close the plate and let it cook for about 4/5 minutes, depending on the power of your machine. They should color but not too much. Once the cooking time has elapsed, open the waffle maker and remove the flatbreads, placing them on a plate. Continue cooking the other flatbreads.

You can use this dough to make pan flatbreads if you don’t have a waffle maker, in this case, I recommend cooking them over low heat for ten minutes, turning them halfway through.

What can I use to flavor the waffle flatbreads?
You can add chopped rosemary or chia seeds or other spices and seeds you like to the dough.
My waffle flatbreads became hard, what should I do?
As mentioned earlier, waffle flatbreads tend to harden when they cool down. If this happens, no problem, you can warm them up for a couple of minutes on low heat in a non-stick pan with a lid or a few seconds in the microwave.
Why did my flatbreads become hard?
All baked goods with instant yeast tend to harden when they cool down, but warming them up makes them soft again.
