Eggless Pancakes

Eggless pancakes and also lactose-free, a valid alternative to Water Pancakes for those intolerant to eggs! Whether for reasons of intolerance or allergies, or for those, like me, who find themselves without eggs but don’t want to give up pancakes for breakfast!

The eggless pancake recipe is very easy to make, just replace the egg with more milk and more flour, but this recipe is also great if you can’t use milk either, as I decided to replace it with soy milk to make the mixture slightly more colorful.

Once ready, you can serve your eggless pancakes with fresh fruit, nuts, honey, and maple syrup, choose according to your taste!

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 7 oz soy milk
  • 1 tsp baking powder

Steps

  • In a bowl, pour the flour along with the sugar and baking powder.

  • Mix the dry ingredients and then start gradually adding the soy milk, stirring with a whisk to obtain a smooth and homogeneous mixture without lumps.

  • When the light eggless pancake mixture is ready, heat a non-stick pan on the stove; this way, you won’t even need to use butter or oil to prevent sticking.

    Take a ladle of the mixture, pour it in the center of the pan, and cook for two minutes on the first side. As soon as bubbles form on the surface, flip the pancake and finish cooking on the second side.

    Move the cooked pancake with a spatula and proceed to cook the remaining pancakes.

  • Serve the pancakes hot, accompanied by honey, jam, maple syrup, fresh fruit, or nuts. Or, even more simply, with a dusting of powdered sugar on top.

STORAGE

You can store the eggless pancakes under a glass dome for desserts for up to two days. Lightly heat the pancakes in a pan or microwave before serving.
