Savory Pie with Pumpkin and Potatoes

The Savory Pie with Pumpkin and Potatoes is a simple and tasty recipe, perfect for a quick lunch or dinner, or to be served as a main dish accompanied by plain rice.

Ingredients

  • 1 roll puff pastry
  • 7 oz pumpkin
  • 9 oz potatoes
  • 1.75 oz breadcrumbs
  • 1 tbsp extra virgin olive oil
  • 5 oz pizza mozzarella (grated)
  • to taste salt
  • to taste oregano

Tools

Steps

  • Peel the potatoes and cut them into cubes. Peel the pumpkin and cut it into similar pieces. Cook both the potatoes and the pumpkin in salted boiling water for about 10 minutes, or until they are soft but not mushy. Drain and let cool.

    Preheat the oven to 350 degrees.

  • In a large bowl, place the pumpkin, the potatoes, the breadcrumbs, salt, extra virgin olive oil and oregano. Mix with a wooden spoon being careful not to break the vegetables,

    Unroll the puff pastry and place it with its own parchment paper on a round baking pan.

    Prick the base with the tines of a fork and fold the edges inwards.

    Evenly distribute the filling and sprinkle the grated mozzarella.

  • Bake and cook at 350 degrees for about 30/35 minutes until golden. Remove from the oven and let cool slightly.
