Chocolate Salami without Butter and Eggs, Lactose and Sugar-Free

The chocolate salami without butter and eggs is also lactose-free and sugar-free, a sweet recipe suitable for intolerances and diabetics (unless otherwise advised by a doctor). Like the sugar-free tiramisu, the chocolate and yogurt mousse and the mousse cake, this chocolate salami is low glycemic. I assure you everyone will like it and no one will notice the difference from the classic chocolate salami recipe. To make the sweet salami, I used sugar-free Digestive biscuits mixed with sugar-free oat biscuits. Fortunately, they are easily found in supermarkets today.

The recipe is very simple, you just need to mix all the ingredients and then shape it into the typical form of this dessert. After letting it rest in the refrigerator, you can sprinkle it with powdered erythritol and serve it sliced.

Ingredients for Vegan Chocolate Salami

  • 220 g sugar-free Digestive biscuits
  • 2/3 cup erythritol (powdered + for sprinkling)
  • 2.5 oz roasted hazelnuts
  • 1/3 cup unsweetened cocoa powder
  • 80 g dark chocolate 60-69%
  • 1/2 cup coconut milk
  • 2.5 tbsp water (or coconut water*)
  • 1 tbsp rum

What You Need to Make Chocolate Salami

  • 1 Plastic Bag or paper
  • 1 Rolling Pin or meat tenderizer
  • 1 Bowl
  • 1 Small Glass Bowl
  • 1 Small Whisk
  • Parchment Paper
  • 1 Sugar Shaker or fine mesh sieve
  • 1 Knife smooth and sharp blade

Procedure

To start, break the dark chocolate, place it in the small bowl, and melt it in the microwave for about 3 minutes at 300 watts. If you do not have a microwave, melt it in a double boiler.

  • Weigh the biscuits and then place them in the bag, crush them with firm but not too strong blows. The biscuits should not be reduced to crumbs.

  • Pour the biscuits into the bowl and add the cocoa powder, erythritol, hazelnuts, and mix.

  • Now, add the melted dark chocolate and mix again.

  • Finally, pour the coconut milk, water, and rum, and mix well until you have a uniform and compact mass.

  • Once the chocolate salami dough is ready, spread a sheet of parchment paper on a surface.

  • Place the mixture on top and, with the help of your hands and the paper, compact the dough, giving it the typical cylindrical shape of a salami.

  • Tip: do not overheat with your hands, no need to work it too much.

  • Apply light pressure and occasionally peel the paper off the salami.

  • Wrap the salami with the same paper and seal the ends. Place in the refrigerator to rest and cool, to easily slice the chocolate salami it should rest for at least an hour in the coldest part of the refrigerator.

  • When the chocolate salami is well chilled, open the paper and sprinkle the surface with 1 tablespoon of powdered erythritol.

  • Change the parchment paper, slice, and enjoy.

  • As an alternative to hazelnuts, you can use unsalted pistachios, almonds, cashews, or you can create a mix of dried fruits.
