Ingredients

  • 10.5 oz zucchini (small)
  • 5.3 oz cherry tomatoes
  • 1.8 oz bread
  • 1 clove garlic
  • parsley
  • basil (to taste)
  • extra virgin olive oil
  • salt

Preparation

  • Wash the zucchini, remove the ends, and cut them into slices of uniform thickness.

    Wash the cherry tomatoes and cut them in half. To your taste, you can remove the seeds or leave them as is.

  • Using a small mixer, chop the bread with a clove of garlic and a bunch of parsley. You can use sliced bread, white or whole wheat, or the stale bread you have at home.

  • Place the zucchini and tomatoes in a bowl, season them with salt and extra virgin olive oil (1).

    Add the grated bread and mix.

    Transfer everything to the fryer basket, using the appropriate parchment paper if preferred (2). Try to distribute the vegetables, overlapping them as little as possible.

  • Cook at 375°F for about 12-13 minutes, turning the vegetables halfway through. Adjust the minutes and temperature based on your fryer model and the thickness of the zucchini.

    If you prefer to use the oven, place everything in a large baking dish and bake at 375°F for about 20-25 minutes.

  • Your gratin zucchini and tomatoes side dish is ready, excellent both hot and warm. If you like, you can scent it with some fresh basil or mint leaves.
