Ingredients
- 2 rolls puff pastry
- 2 apples
- 300 g ricotta
- 90 g sugar
- 1 egg
- 4 tablespoons jam (blueberry, apricot or whichever you prefer)
- as needed brown sugar (for garnish)
How to make the simple apple cake
Place the ricotta in a bowl.
Add the sugar and beaten egg, then mix and set aside.
Unroll the puff pastry with its paper, on top of a baking tray, and place another one on top, roll the edges to form a crust, then prick it with the tines of a fork.
Fill with the jam and with crumbled cookies and ricotta.
Finish with thinly sliced apples and sprinkle with brown sugar.
Bake in a preheated oven at 375°F for about 40 minutes or until golden.
Storage of the simple apple cake
This type of cake is best consumed on the same day, as it loses its crispness the next day. If you have leftovers, it can be stored in the refrigerator for up to 2 days.
